Introduction

Ingredients for Kobbari Laddu (Coconut Filling)

Procedure for Coconut Laddu

Step 1: Preparing the Coconut Powder

Blend fresh coconut pieces into a fine powder. This will be used as the main ingredient for the sweet filling.

Step 2: Cooking Coconut and Jaggery

In a pan, mix 1 cup of coconut powder and 1 cup of jaggery. Cook the mixture on medium flame without adding water until it thickens into a smooth, sticky consistency.

Once the mixture is thick, turn off the flame and let it cool slightly. This will allow the mixture to firm up.

Biyyam Pindi (Rice Flour): 3 1/2 Cups

Procedure for Undrallu

Step 1: Preparing Jaggery Syrup

Heat 250ml of water in a pan. Meanwhile, boil 1 cup of jaggery in 100ml of water until it melts completely, forming a syrup.

Step 2: Cooking Rice Flour Mixture

Mix 1/2 cup of rice flour with 125ml of water to create a smooth paste. Gradually add this mixture to the boiling water and cook for 3-4 minutes on medium flame until it thickens.

Step 3: Preparing the Dough

Place 3 cups of rice flour onto a wide plate. Add the cooked rice flour mixture and mix well to form a soft, smooth dough.

Step 4: Adding Jaggery Syrup

Pour the melted jaggery syrup into the rice flour mixture and knead it into a smooth dough.

Step 5: Greasing Idli Plates

Apply a small amount of ghee to the idli plates to prevent sticking during the steaming process.

Step 6: Stuffing and Shaping Undrallu

Take small portions of the dough, flatten them, and place a coconut laddu in the center. Seal the edges and roll it into a smooth ball. Place the stuffed balls on the greased idli plates and steam for 10 minutes on high flame and 10 minutes on low flame.

After steaming, the Kobbari Undrallu will be ready. They are soft, sweet, and perfect for Naivedyam during Vinayaka Chavithi.
