Potato French Fries are an all-time favorite snack for everyone. This curry-infused variety serves as an excellent side dish accompanying various dal curries such as Tomato Dal, spinach dal, sambar, and more. The combination of crispy fries with aromatic spices creates a harmonious blend of flavors. Below are the step-by-step instructions to prepare this delicious Potato French Fries Curry.

Ingredients

Potato slices: 1 bowl 
Sliced potatoes ready for cooking

For talimpu:
Dry red chili (endemirapa): 1
Urad dal (minapappu): 1 tbsp
Mustard seeds (aavalu): 1 tbsp
Cumin seeds (jeelakarra): 1 tbsp
Assorted spices for talimpu

Turmeric powder: 1/2 tbsp

Salt: As per taste

Red chili powder (kaaram): 1 tbsp

Green chillies, curry leaves and onion slices: 2, a few, 1/4 bowl respectively

Bottle of cooking oil

Procedure

Step 1: Blanch the Potato Slices

Place the potato slices in boiling water with added salt and let them blanch for 2 minutes. After blanching, remove them from the water and place them on a clean, dry cloth to absorb any excess moisture.

Step 2: Fry the Potatoes

Heat oil in a pan for frying the potatoes. Sprinkle 1/4 tbsp of salt on the potato slices before frying. Fry the potatoes on high flame until they achieve a golden brown color.
Note: Adjust the flame as needed while frying to ensure the potatoes do not darken too quickly.

Step 3: Drain the Fried Potatoes

Once fried, remove the potatoes from the oil using a strainer and place them on oil-absorbing cooking paper to remove excess oil.

Step 4: Prepare the Talimpu

Heat 1 tbsp of oil in a pan and add the talimpu. Add and sauté the spices one by one on low flame as follows:

1 tbsp Urad dal (minapappu), 1 tbsp Cumin seeds (jeelakarra), 1 tbsp Mustard seeds (aavalu)

When the mustard seeds start crackling, add curry leaves and 1/2 tbsp of turmeric powder.

Step 5: Add and Sauté Onion Slices

Add the onion slices to the pan and sauté them for a minute on medium flame.

Step 6: Combine Potatoes and Green Chillies

Add the fried potato slices and green chilli slices to the pan. Sauté them together for 30 seconds on medium flame.

Step 7: Add Red Chili Powder

Add 1 tbsp of red chili powder to the mixture. Mix well and sauté for a minute on medium flame.

Step 8: Serve the Curry

Turn off the flame and transfer the Potato French Fries Curry to a serving bowl.
