Ingredients
Cashews: 100 grams
Almonds (Badam): 100 grams
Walnuts: 100 grams
Raisins: 100 grams
Iranian Red Dry Dates: 100 grams
Jaggery: 200 grams
Poppy Seeds: 1 teaspoon
Ghee (clarified butter): 1 teaspoon
Procedure
Step 1: Roast the Nuts
Fry the cashews, almonds, and walnuts separately over high flame for 1 minute each, stirring continuously to prevent burning. Once done, set them aside to cool.
Step 2: Roast the Poppy Seeds
In the same pan, add 1 teaspoon of ghee and fry the poppy seeds over high flame for 1 minute.
Step 3: Grind the Nuts
Using a grinder or food processor, coarsely grind the roasted almonds, cashews, and walnuts. Do not grind them into a fine powder; a coarse texture adds to the laddus' crunchiness.
Step 4: Prepare the Sweet Mixture
In the grinder, blend the raisins, dates, and jaggery for about two rounds until they form a sticky mixture.
Step 5: Combine and Shape the Laddus
In a large mixing bowl, combine the ground nuts, the sweet mixture of raisins, dates, and jaggery, and the fried poppy seeds. Mix everything thoroughly until well combined. Take small portions of the mixture and roll them into round laddus using your palms.
