Minapa gullu or minapappu (Whole Black Gram): 1/2 kg

Procedure

Step 1: Soak Black Gram

Soak the black gram (urad dal) for 3 hours. After soaking, strain the water completely and keep the soaked dal aside.

In a wet grinder, blend the soaked black gram along with ginger and green chillies. Add very little water while blending. Be careful not to add too much water, as it will make the vada absorb more oil during frying, resulting in greasy vadas.

Note: Using a wet grinder for blending gives the best texture and fluffiness to the vada batter, resulting in crispy vadas.

Step 3: Add Salt and Prepare the Dough

Once the batter is smooth and fluffy, transfer it to a bowl. Add salt as per taste and mix well. In the meantime, heat oil in a deep frying pan.

To shape the vadas, take a small portion of the batter, wet your hand, and flatten it into a round shape. Use your thumb to make a small hole in the center. You can also use a clean plastic sheet or banana leaf to shape the vadas if preferred.
