Ingredients

Vullipaya (Pyaz, Onion) : 1

One onion chopped and ready to use for Onion Raitha

Pachimirapakaya (Hari mirch, Green Chillies) : 2

Two fresh green chilies for adding heat to Onion Raitha

Perugu (Dahi, Curd) : 1 bowl

A bowl of fresh curd or yogurt for Onion Raitha

Uppu (Namak, Salt) : 1/2 tsp

A pinch of salt to balance the flavor in Onion Raitha

Kothimeera (Kothimir, Coriander Leaves) :

Procedure

Step 1: Preparing the onions and chilies

Cut the onion and green chilies into small, fine pieces. This helps in distributing the flavor evenly throughout the raitha.

Step 2: Mashing the onions

Mash the chopped onions with your hand, adding 1/2 tsp salt, a pinch of sugar, and 1/4 tsp Jeelakarra (Cumin seeds). This step enhances the flavor by releasing the natural juices of the onion and infusing it with spices.

Step 3: Mixing the ingredients

Add the chopped green chilies to the mashed onion mixture. Then, mix in the curd thoroughly. For added richness, you can include a layer of milk cream, which gives the raitha a smoother texture and enhances the flavor. Mix everything well to ensure all the ingredients are combined.
