Cinnamon (Dalchina Chakka): 2-4 cm stick

Procedure

Step 1: Marinate the Fish

Marinate the cleaned fish pieces with 2 teaspoons of ginger garlic paste, 1 teaspoon of salt, 1-2 teaspoons of red chilli powder, and 1 teaspoon of turmeric powder. Mix well and let it rest for 30 minutes.

Meanwhile, dry roast the coriander seeds, cloves, cardamom, and cinnamon in a pan without oil until they release their aroma. Let them cool and then grind them into a fine masala powder.

Chop the onions and green chillies into small pieces.

Step 2: Fry the Fish Pieces

Heat oil in a pan over medium flame. Fry the marinated fish pieces until they turn golden brown, approximately 5 minutes per side. Remove them from the oil and set aside.

Step 3: Sauté Onions and Green Chillies

In another pan, heat 1 teaspoon of oil over high flame. Add the chopped onions, green chillies, and a pinch of salt. Sauté them for about 5 minutes, stirring continuously.

Step 4: Add Spices

Add 1 teaspoon of turmeric powder and 1 teaspoon of salt to the pan. Mix thoroughly and continue cooking for another minute.

Step 5: Incorporate Ginger Garlic Paste

Once the onions turn golden brown, add 1 teaspoon of ginger garlic paste. Mix well and cook for 2 more minutes to let the raw smell disappear.

Step 6: Add Masala Powder and Herbs

Add 2 teaspoons of the prepared masala powder to the mixture. You can also add dry coconut powder or cashew powder for extra flavor. Sprinkle 1 teaspoon of red chilli powder, chopped coriander leaves, and mint leaves if desired. Mix everything thoroughly.

Step 7: Combine Fish with Masala

Add the fried fish pieces to the pan. Gently mix them with the masala mixture, being careful not to break the fish pieces. Turn off the flame after mixing.
