Ingredients

Here are the ingredients required to make Palli Pachadi:

  • Pallilu (Peanuts) : 100 grams
  • Pachimirapa (Green Chillies) : 4
  • Fresh green chillies for the chutney
  • Endumirapa (Dry Red Chillies) : 4
  • Dry red chillies used for adding heat
  • Karivepaku (Curry Leaves) : 1 stem
  • A stem of fresh curry leaves
  • Chintapandu paste (Tamarind Paste) : 1 tsp
  • Tamarind paste to add tanginess
  • Jeelakarra (Cumin Seeds) : 1/2 tsp
  • Cumin seeds for enhancing flavor
  • Sugar : 1/4 tsp
  • A small amount of sugar for balancing flavors
  • Salt : 1 tsp (As per taste)
  • Salt as per taste for seasoning
  • Oil : 1 tsp
  • Oil for frying ingredients

Procedure

Step 1: Fry the Peanuts

Fry the peanuts in a pan. You can either use oil or dry roast them, depending on your preference.

Step 2: Fry the Chillies and Curry Leaves

In 1 tsp of oil, fry 4 green chillies, 4 dry red chillies, and 1 stem of curry leaves for about 2 to 3 minutes.

Step 3: Prepare for Blending

Let the fried ingredients cool. Once cool, add the fried peanuts, green chillies, dry red chillies, curry leaves, 1 tsp tamarind paste, 1/2 tsp cumin seeds, salt as required, and 1/4 tsp sugar to a blender.

Step 4: Blend the Chutney

Blend the ingredients for a few pulses. Then add water gradually to achieve the consistency of your preference. Blend until smooth.
