Allam (Adarak, Ginger) : 25 grams
Karivepaku (Cudi Patta, Curry Leaves) : 2 stems
Vullipaya (Pyaz, Onion) : 1
Vellulli (Lahsun, Garlic) : 1 full
Jeelakarra (Jeera, Cumin seeds) : 1 tsp
Chintapandu (Imli, Tamarind) Paste : 2 tsp
Uppu (Namak, Salt) : 1 & 1/2 to 2 tsp
Pasupu (Haldi, Turmeric) : 1/2 tsp
Nune (Thel, Oil) : 2 tsp
Procedure
Step 1: Preparing the ingredients
Wash the green chillies thoroughly and peel the skin off the ginger. These two ingredients are the key to the chutney's fiery flavor.
Step 2: Frying the ingredients
Heat 2 tsp oil in a pan. Once hot, add the green chillies, ginger, and curry leaves. Sauté them for about 5 minutes to release their flavors.
Step 3: Preparing onions
While the ingredients are frying, chop the onion into small pieces. This will be blended with the chutney later to add texture.
Step 4: Blending the mixture
Once fried, blend the green chillies and ginger into a smooth paste. Then, add tamarind paste, cumin seeds, garlic, salt, and turmeric. Blend everything again until smooth.
Step 5: Adding onions and final blending
Add the chopped onion pieces to the blended chutney mixture and blend again until well-combined. The onions will give the chutney a slightly crunchy texture and enhance its flavor.
