Boiled Potatoes: 3
Refined oil: 2 tablespoons
Sanagapindi (Gram flour): 2 tablespoons
Water: 1 glass
Coriander leaves: A few
Curry leaves: 1 stem
Salt: 1 tsp (to taste)
Procedure
Step 1: Prepare the Ingredients
Cut 2 onions and 4 green chillies into thin slices.
Step 2: Mash the Potatoes
Mash the 3 boiled potatoes until smooth and set aside.
Step 3: Temper the Spices
Heat 2 teaspoons of refined oil in a pan. Add ½ teaspoon of roasted gram (sanagapindi), ½ teaspoon of mustard seeds (aavalu), ½ teaspoon of cumin seeds (jeelakarra), 2 red chillies, and 1 stem of curry leaves. Sauté until the spices are fragrant.
Step 4: Sauté Onions and Chillies
After the spices begin to splutter, add the sliced onions and green chillies. Fry until the onions turn golden brown, then add the mashed potatoes to the pan. Stir well to combine.
Step 5: Prepare the Gram Flour Mixture
Meanwhile, take 2 tablespoons of sanagapindi (gram flour) in a container and add 1 glass of water. Mix thoroughly until there are no lumps.
Step 6: Add the Gram Flour Mixture
After 5 minutes, add the sanagapindi mixture (gram flour and water) to the curry. Continuously mix to ensure the curry thickens to a medium consistency.
Step 7: Final Seasoning
Let the curry cook for another 5 minutes until it reaches the desired thickness. Add 1 tablespoon of salt or adjust according to your taste preferences.
