Ingredients
Milk Bread
Paalu (Milk) : 1 litre
Panchadara (Sugar) : 1 Cup (250ml)
Yelukkayi (Cardamom) : 5 pods
Jeedipappu (Cashew Nuts) : 10 pieces
Kismis (Raisins) : 10 pieces
Neyyi (Ghee) : 3-4 teaspoons
Procedure
Step 1: Boil the Milk
Begin by pouring 1 litre of fresh milk into a heavy-bottomed pan. Heat the milk over a low flame, allowing it to boil gently for about 10 minutes. Stir occasionally to prevent the milk from sticking to the bottom of the pan. This step ensures the milk thickens slightly, adding a rich base to your dessert.
Step 2: Prepare the Sugar Syrup
In a separate cooking bowl, add 1 cup of sugar and a small amount of water. Place the bowl over a low flame and let the sugar dissolve completely, stirring continuously. Allow the mixture to thicken into a syrup over approximately 15 minutes. This syrup will sweeten the bread pudding and infuse it with flavor.
Step 3: Fry Cashews and Raisins
In a small pan, heat 2 teaspoons of ghee over medium flame. Add the cashew nuts and raisins, frying them until they turn golden brown and become crisp. Once done, remove them from the pan and set them aside for garnishing later.
Step 4: Fry the Bread Slices
Apply 2-3 teaspoons of ghee on a tawa (griddle) and heat it over medium flame. Once the ghee is hot, place the slices of milk bread on the tawa.
Step 5: Cook the Bread Slices
Fry the bread slices on both sides until they turn golden brown. Ensure that the slices are cooked evenly by maintaining a low flame. This process makes the bread absorb the ghee, enhancing its flavor and texture.
Step 6: Combine Milk and Sugar Syrup
Once the sugar syrup is ready, carefully add it to the boiled milk. Ensure that the flame is turned off before mixing to prevent the milk from curdling. Stir the mixture thoroughly to combine the flavors.
Step 7: Add Fried Bread Slices
Place the fried bread slices into the milk and sugar syrup mixture. Gently mix them to ensure that the bread absorbs the syrup fully, becoming soft and flavorful.
Step 8: Cook the Pudding
Return the pot to the flame and cook the mixture over medium heat for about 5 minutes. Stir continuously to achieve the desired thickness. The pudding should have a creamy consistency, with the bread well-integrated into the milk.
Step 9: Add Cardamom Powder
Sprinkle cardamom powder into the pudding and mix thoroughly. The cardamom adds a fragrant aroma and enhances the overall flavor of the dessert.
Step 10: Garnish and Serve
