Chitti Burelu - Traditional South Indian Sweet

Chitti Burelu, also known as Chitti Boorelu, is a delightful traditional South Indian sweet that is cherished for its rich flavor and crispy texture. Biyyam Pindi (Rice Flour): 1 1/2 Cups

Procedure

Step 1: Preparing the Dough

In a large mixing bowl, combine the rice flour (Biyyam Pindi) with the mashed jaggery (Bellam). Mix them thoroughly to ensure that the jaggery is evenly distributed throughout the flour.

Step 2: Forming the Dough

Gradually add a little water to the mixture while stirring continuously. Aim to form a thick, pliable dough. If the dough is too dry, you can add a pinch of Soda Uppu (baking soda) to enhance the texture and flavor.

Tip: If the edges of the burelu are breaking while cooking, add a little Atta (whole wheat flour) to smoothen the dough and improve its elasticity.

Step 3: Heating the Oil

Heat the oil in a deep frying pan over high flame until it reaches the right temperature. To test if the oil is hot enough, drop a small piece of dough into the oil. If it sizzles and rises to the surface immediately, the oil is ready for frying.

Step 4: Shaping the Burelu

Take a small portion of the dough in your hands and shape it into round, flat discs using your fingers. Ensure that each burelu is of uniform size for even cooking.

Step 5: Frying the Burelu

Carefully place the shaped burelu into the hot oil, one at a time, to prevent overcrowding. Fry them until they turn a golden brown color, ensuring they are crispy on the outside and soft on the inside.
