Introduction

Procedure

Step 1: Prepare the ginger and chillies

Take 5 grams allam (ginger) and 5 green chillies.

Step 2: Blend the ginger and chillies

Blend ginger and chillies, and keep the mixture aside.

Step 3: Prepare onions and chillies

Cut onions and 4 chillies into slices.

Step 4: Clean and chop the spinach

Clean palakura (spinach) in salt water and cut it into small pieces.

Step 5: Mix the dry ingredients

In a large bowl, add 1 bowl sanagapindi (gram flour) and 2 tsp biyapupindi (rice flour).

Step 6: Combine the vegetables and spices

Add 2 bowls of palakura (spinach), few curry leaves, 1/2 tsp jeelakarra (cumin seeds), ginger-chilli paste, 1 bowl sliced onions with 4 sliced chillies, 1 tsp salt, 1 pinch turmeric, and soda uppu (baking soda). Meanwhile, heat 3 bowls of oil in a pan.

Step 7: Make the pakodi mixture

Mix all the ingredients with a small amount of water to form a thick batter.

Tip: It is better to use less water. Lesser the water added, lesser the oil absorbed during frying.

Step 8: Fry the pakodis

Slowly drop spoonfuls of the mixture into the hot oil, fry until the pakodis turn golden brown, and separate from the oil.
