Procedure:

Step 1: Marinate the Chicken

Marinate the chicken by adding 2 tsp turmeric powder, 2 tsp red chili powder, and 2 tsp salt. Let it rest for 1 hour to absorb the flavors.

Step 2: Prepare the Onions and Green Chillies

In the meantime, cut onions and green chilies into fine pieces to prepare for cooking.

Step 3: Fry the Spices

Heat 2-3 tsp of oil in a pressure cooker. Fry cloves, cinnamon, and cardamom for 1 minute on high flame to release their aromatic flavors.

Add a few mint leaves, followed by the chopped onions and green chilies. Sauté them together to form the base of the curry.

Once the onions are slightly softened, add 2 tsp turmeric powder and 1/2 tsp salt. Fry the onions until they turn golden brown, stirring occasionally.

Add 2 tsp of ginger garlic paste to the fried onions. Mix well and continue to fry for another 5 minutes on medium flame.

Add the marinated chicken to the mixture and stir it well. Cook for 5 minutes on low flame to allow the chicken to release its juices.

Pour in 500-600 ml of water and close the pressure cooker. Let it whistle 3 times on high flame and cook for an additional 5 minutes on low flame. Adjust based on the tenderness of the chicken (3 whistles for soft chicken, 5 for tougher meat).

Open the pressure cooker, add 3-4 tsp of the prepared masala powder, and cook for 5 minutes on medium flame, allowing the spices to blend.
