Peeled Carrots: 1/2 kg (approximately 500 grams)

Whole Milk (Chikkati Palu) or Toned Milk: 1 litre
A jug of whole milk

Sugar (Panchadara): 1/4 kg (approximately 250 grams), adjust to taste

Procedure

Step 1: Cook the Carrots

Place the peeled carrots into a pressure cooker and add enough water to cover them. Cook on high flame until you hear one whistle. Then, reduce the flame to low and cook for an additional 5 minutes to ensure the carrots are thoroughly softened.

Step 2: Prepare the Cooked Carrots

Once the carrots are cooked, allow them to cool slightly. If you didn't peel them before cooking, remove the skins now. Cut the cooked carrots into smaller pieces to make blending easier.

Step 3: Blend the Carrots into a Smooth Paste

Transfer the carrot pieces into a blender. Blend them until you achieve a smooth and creamy paste without any lumps. This puree will give the milk its rich carrot flavor.

Step 4: Boil the Milk

In a thick-bottomed vessel or pan, bring 1 litre of whole milk to a boil over medium flame. Once it starts boiling, reduce the flame to low to prevent the milk from burning or overflowing.

Gently add the carrot puree into the boiling milk while continuously stirring to combine them evenly. Continue stirring over low flame for about 2 minutes to blend the flavors.

Step 6: Sweeten the Carrot Milk

Add 1/4 kg (250 grams) of sugar to the carrot milk mixture. Adjust the amount of sugar according to your taste preference. Stir continuously over low flame for about 10 minutes, allowing the sugar to dissolve completely and the flavors to meld.

Step 7: Prepare the Almond and Cardamom Paste

While the carrot milk is simmering, blend the soaked almonds and 6 cardamom pods into a fine paste. You may add a little milk to help with blending.

Step 8: Add Almond Paste to the Milk

Add the almond and cardamom paste to the simmering carrot milk mixture. For an extra smooth texture, you may strain the paste before adding. Stir well to incorporate the paste into the milk. Cook for an additional minute over low flame.

Turn off the flame and allow the carrot milk to cool to room temperature. Then, place it in the refrigerator or freezer to chill for 2-3 hours. Chilling enhances the flavor and makes it more refreshing.
