Pesarattu is a traditional and popular breakfast dish from the Andhra Pradesh region in India. Made primarily with green gram (moong dal), this nutritious dosa is a delightful blend of taste and health. Unlike the regular rice-based dosa, Pesarattu is packed with proteins and is known for its unique flavor and texture. It's often served with ginger chutney or upma, making it a wholesome and filling meal to start your day.

Ingredients

Raw Moong Beans: 250 grams (1/4 kg)

Procedure

Step 1: Soak the Moong Beans

Rinse the raw moong beans thoroughly under running water. Soak them in sufficient water for at least 6 hours. This helps in softening the beans, making them easier to blend into a smooth batter. (If using moong dal, soak for half an hour.)

Step 2: Prepare the Batter

Drain the soaked moong beans. In a blender, add the soaked moong beans, ginger, green chilies, cumin seeds, and salt as per taste. Blend the mixture until you get a smooth, thick paste. If necessary, add a little water to aid blending.

Step 3: Spread the Batter on the Tawa

Heat a non-stick frying pan or tawa over medium flame. Once hot, pour a ladleful of batter onto the center of the tawa. Using the back of the ladle or a spatula (gunta gara), spread the batter in circular motions from the center towards the edges to form a thin dosa.

Step 4: Cook the Pesarattu

Drizzle a little oil around the edges of the pesarattu. Cook on medium flame until the bottom side turns golden brown. Sprinkle chopped onions, chilies, and ginger on top. Optionally, add a small amount of butter for extra flavor. You can choose to cook only one side or flip the dosa and cook the other side for a minute.

Step 5: Serve Hot

Fold the cooked pesarattu and transfer it to a serving plate. Serve hot with ginger chutney or any chutney of your choice.
