Procedure

Add the jaggery water to the wheat flour in a mixing bowl. Stir the mixture well until it becomes a smooth and homogeneous batter. Ensure there are no lumps to achieve the perfect texture.

Step 2: Adjust the Batter Consistency

Check the consistency of the batter; it should be thicker than regular dosa batter. This thickness ensures that the sweet dosa cooks properly and has a soft, chewy texture.

Step 3: Preheat the Pan

Preheat a dosa tawa or non-stick pan over medium heat. Add 2-3 drops of oil and spread it evenly using a brush or a tissue to prevent the dosa from sticking.

Step 4: Pour and Spread the Batter

Using a ladle (gunta garita), pour a portion of the batter onto the center of the tawa. Gently spread it in a circular motion to form a dosa of medium thickness.

Step 5: Cook the Dosa

Cook the dosa on medium flame until the edges start to lift, and the bottom turns a deep brown color. Flip the dosa and cook the other side until it's well done. You may cover the pan with a lid to ensure even cooking if required.
