Potato French Fries Curry | Veyinchina Aloo Kura

Potato French fries is a all time favorite snack for every one. The curry variety is a good side dish with dal curries like tomato dal, spinach dal, sambar and so on. Here are the step by step instructions.
Ingredients
Potato slices: 1 bowl
For talimpu:
Dry red chilly (endumirapa): 1, urad dal (minapappu): 1 tbsp, mustard seeds (aavalu): 1 tbsp, cumin seeds (jeelakarra): 1 tbsp
Turmeric powder: 1/2 tbsp
Salt: As per taste
Red chilly powder (kaaram): 1 tbsp
Green chillies, curry leaves and onion slices: 2, few, 1/4 bowl respectively
Oil: To fry
Procedure
Step 1: Keep potato slices in salt added boiling water for 2 minutes. Remove them from water and keep them on clean dry cloth (water gets absorbed)
Step 2: Pre heat oil in a pan to fry potatoes. Sprinkle 1/4 tbsp salt on potatoes before frying. Fry them in high flame up to golden brown color
Note: Adjust the flame depending on potatoes while frying, the potatoes should not turn dark immediately when added into oil.
Step 3: Remove them from oil with strainer and rest them on oil absorbing cooking paper
Step 4: Pre heat 1 tbsp oil and give talimpu. Add and saute (fry) spices in low flame one after one as shown
1 dry red chilly
1 tbsp urad dal (minapappu), 1 tbsp cumin seeds (jeelakarra), 1 tbsp mustard seeds (aavalu)
When mustard seeds starts crackling (sound) add curry leaves and 1/2 tbsp turmeric powder
Step 5: Add and mix onion slices. Fry (saute) them for a minute in medium flame
Step 6: Add and mix fried potatoes and green chilly slices. Saute (fry) for 30 seconds in medium flame
Step 7: Add 1 tbsp red chilly powder. Mix and saute (fry) for a minute in medium flame
Turn off the flame and keep it in a serving bowl.
Potato french fries curry is ready to serve :)
