Carrot milk is a heathy drink and kids will like it. This is very easy to prepare and it is very tasty. This milk is good when it is cool especially in summer. Here are the step by step instructions
Preparation time: 5 minutes
Cooking time : 20 minutes
Serves: 5
Main ingredient: Carrot & Milk
Ingredients
Peeled carrot: 1/2 kg
Whole milk (chikkati palu) or toned milk : 1 litre
Sugar (panchadara): 1/4 kg
Soaked almonds (badam): 100 grams
Cashews (jeedipappu): 100 grams
Cardamom (elaichi, yalukalu): 6
Procedure
Step 1: Cook carrots in a presuure cooker for 1 whistle in high flame, then 5 minutes in low flame
Step 2: Remove the carrot skin if it is cooked without peeling first. Cut them into pieces
Step 3: Now blend carrot pieces in to smooth paste
Step 4: Boil 1 litre whole milk (preferable), in a thick bottom vessel or pan or pressure cooker. Turn it into low flame when milk is boiled
Step 5: Add the carrot paste in to boiling milk, Keep on stirring in low flame for 2 minutes
Step 6: Add sugar to the carrot added milk and let it cook for 10 minutes in low flame, keep on stirring
Meanwhile, blend few almonds and 6 cardamom into paste
Step 7: Add little milk to almond paste and add it to the contents of the pan. Filter it if you like it to be really smooth
Step 8: Let it cook for a minute in low flame. Then turn off the flame
Let it cool in freezer for 2-3 hours
Step 9: Cut cashews and almonds in to small pieces
Step 10: Add cashews and almond pieces to cooled carrot milk
Cool and healthy carrot milk is ready to serve. Serve it cool for parties, birthdays, functions :)
